MiMi's Meatloaf
Every time I make meatloaf for my family it brings back so many childhood memories. My mother made the best meatloaf I've ever tasted. I can just remember everything about the house and neighborhood I grew up in every single time. So it goes without saying this is an extreme comfort food in my book.
MiMi's Meatloaf
Prep: 15 Mins Cook: 45-55 mins Total: 1 hour 10 mins
*Yield: 8 servings
1 Whole Red Bell Pepper1 Whole Green Bell Pepper
1 Small Onion
2 Eggs
3/4 C. Bread Crumbs
1/4 C. BBQ Sauce
1 Packet of Beefy Onion Soup
1 TB. Garlic
2 TB. Italian Seasoning
1 tsp. Pepper
2 tsp. Low Sodium Seasoning Salt
1lb Ground Turkey Meat (80% lean cooks up so much better)
3/4lb Ground Beef (90% lean or less)
Start by dicing your peppers and onion. I prefer to sauté them just a little until they are JUST translucent in color. You don't have to sauté them too much because they will cook down once added to your meatloaf. If you like you can add your seasonings once your peppers and onion start to cook. Sometimes I do, sometimes I don't just depends on the day, but most times I add them later on.
In a big mixing bowl. Add the rest of your ingredients, including your meat. This is where those old school hand mixing skills come into action. I love to use gloves at this stage because I hate touching raw meat and hate it getting under my nails. I'm a little OCD when it comes to stuff like this. Just make sure ALL ingredients are mixed very well. I have heard of people putting a splash of buttermilk or any milk they have in their meatloaf, I've done it once but that's because I didn't have enough binding ingredients.
Once everything is all mingled together, mold your loaf into your favorite baking dish. My favorite part of the meatloaf is the ketchup baked on top. It's just something about the way it bakes up and taste. It just makes it taste so much better. You can omit this step if you like. Cover with aluminum foil. Next place prepared meatloaf into your preheated oven at 350 degrees. Cook for 45-55 mins.
*NOTE: If you choose to do the ketchup method, bake for additional 5 mins uncovered.
